These Muffins always look amazing when they come out of the oven at school and I often end up coming home and making some for myself! Plus the recipe is super easy for children of any age! For an alternative, omit the chocolate chips and top the muffins with melted chocolate for something more sticky and comforting (Melt 200g of milk chocolate, wait for it to cool slightly before pouring a little on top of each muffin). Yum!
Ingredients
2 eggs
125ml Vegetable Oil
300ml Milk
1 Tsp Vanilla Extract
200g Caster Sugar
350g Self Raising Flour
75g Cocoa Powder
100g Chocolate Chips/ Fudge Pieces
Directions
- Preheat the oven to 180ᵒC. Line a 12 hole muffin trays with large muffin cases.
- In a large mixing bowl, whisk together the eggs, oil, milk and vanilla extract.
- Add the sugar and whisk until you have a smooth batter.
- Sift in the flour and cocoa powder and whisk until the mixture is smooth and there are no lumps of flour. Stir in the chocolate chips.
- Evenly fill the muffin cases to about two thirds full.
- Bake in the oven for 25-30 minutes until risen and slightly darkened on the top.
- Remove the muffins from the oven and leave in the muffin trays to cool for 5 minutes. Transfer to a wire rack to cool completely.
