Tomato Rice Salad

Ok so, I’m not much of a fan of salads… but i LOVE this rice! I called it a salad because it’s packed full of vegetables and pretty healthy… but it’s hot! This is a super easy recipe with minimal mess as it’s all cooked in one pot. The method might seem unusual but trust me it works! Also… wild rice is amazing!

Ingredients

  • 250g White and Wild Rice Combination
  • 500ml Vegetable stock (I use bouillion)
  • 400g Tin Chopped Tomatoes
  • 1 Onion
  • 3 Mixed Peppers (Using red, yellow and green makes it super colourful!)
  • 200g Sweetcorn
  • 2 Cloves Garlic, crushed
  • 1 Tsp Smoked Paprika
  • 1 Tsp Ground Cumin
  • 1 Tsp Dried Oregano
  • 1 Tsp Salt
  • 1/2 Tsp Pepper

Directions

  1. Make sure you rinse and soak your rice really well until the water runs clear when rinsed again – if you don’t rinse it well enough you’ll end up with stodgy rice.
  2. In a large pan, boil the stock and add the tinned chopped tomatoes. Add in all seasonings including garlic, stir and add the rice.
  3. Finely dice the peppers and onion and add to the pan. Continue to cook, stirring frequently, for 20 minutes. The rice should absorb all of the liquid in the pan. Taste the rice to make sure it is soft throughout and if not, add another 100ml water at a time until cooked.
  4. Taste and adjust seasoning before serving.
