It’s getting really cold now and all I want to do is sit in front of the TV and eat comfort food. These syrup sponges take 10 minutes to make and 15 minutes in the oven. They’re perfect for warming your bellies and also impressing your guests in no time at all!
Ingredients

- 75g Soft Butter, plus extra for greasing
- 75g Brown Sugar
- 1 Egg
- 75g Self Raising Flour
- 2 Tbsp Milk
- 4 Heaped Tsp Golden Syrup
Directions
- Preheat your oven to 160ᵒc Fan/180ᵒc regular.
- Grease four small ramekins lightly with butter. Add a heaped teaspoon of golden syrup to each ramekin and swirl it around the bottom.
- In a medium sized bowl, use a fork to combine the butter and sugar. Stir in the egg, follow with the flour and finally add the milk to loosen the mixture.
- Evenly spoon the sponge mix into the four ramekins. Use a spoon to smoothen the mixture in the ramekins, getting into the corners.
- Bake the sponges in the oven for 12-15 minutes until risen and slightly golden on top.
- Leave to stand for 2-3 minutes before following a knife around the edges of the ramekins and turning the sponge upside-down onto plates. (You can also serve them in the ramekins – they look quite nice in glass ones!)
- Enjoy with cream, custard or just as they are!!
