Spicy Bean Burgers

These spicy bean burgers are a great alternative to regular beef burgers, they’re bright and colourful with lots of flavour.

Ingredients

Makes 6 Burgers

  • ½ Red onion
  • 2 Garlic Cloves
  • 1 400g Tin Cannellini Beans
  • 50g Breadcrumbs
  • 2 Tbsp Sundried Tomato Paste
  • Pinch of Chilli
  • 1 Egg
  • Salt and Pepper
  • 1Tbsp cooking oil

Directions

  1. Finely chop the onion and crush the garlic.
  2. In a large bowl, mash the beans using a potato masher.
  3. Add the remaining ingredients and mix well.
  4. Season with salt and pepper.
  5. Use your hands to shape the mixture into six round disks.
  6. Heat the cooking oil over a medium heat in a frying pan. Cook the burgers in the pan for 2-3 minutes on each side. Lightly press the burgers with a spatula to ensure the heat gets all the way through. When they are cooked they should have become solid and golden brown.
