Rocky Roads

Rocky Roads can be made how you like, with what you like or what you have! We have listed a variety of ingredients for you to be creative with and we are sure your creations will be delicious!

Ingredients

  • 300g Chocolate (Ideally 150g dark and 150g milk but all milk or all dark works well depending on your taste preference! White chocolate can work but often doesn’t mix well with the butter due to the high fat content)
  • 3 Tbsp Golden Syrup/ Maple Syrup/ Treacle/ Agave Syrup (Syrup is used just to prevent the chocolate from being completely solid when it sets)
  • 150g Butter/ Margarine/ Vegetable Spread
  • 200g Biscuits (any kind)
  • 100g Mini Marshmallows (if you don’t have any, double the below ingredients)
  • 50g Glace Cherries/Raisins/ Sultanas/ Currants/ Any other Dried Fruit
  • 50g Smarties/ M&Ms/ Malteasers/ For Easter; Mini Eggs or alternative Small Chocolate Eggs/ 2-3 Creme Eggs

Directions

  1. Line a 20cm square cake tin/ similar sized rectangular tin with baking paper OR lay out 12 individual muffin/ cupcake cases on a tray.
  2. Break your chocolate up into a small heat proof bowl. Either microwave (30 seconds and then 20 seconds at time, stirring in between) or place over a small saucepan of gently simmering water until completely melted.
  3. In the meantime, in a large mixing bowl, use the end of a rolling pin to break up the biscuits into small chunks. Stir your chosen ingredients in with your biscuits.
  4. Once the chocolate is fully melted, add in the butter and syrup and stir until smooth and silky. Pour the chocolate into your mixing bowl and stir to combine all of your ingredients.
  5. Pour or spoon the mixture into your chosen cake tin/ cases. Allow to set in the fridge for up to an hour, take out of the fridge and leave for 5 minutes before cutting and enjoying!
