What to do with left over puff pastry… Make Raspberry and Frangipane Tarts!!
Ingredients
Frangipane:
- 60g Butter
- 60g Caster Sugar
- 1 small egg
- 60g Ground Almonds
- 1Tbsp Plain Flour
- 1/2Tsp Almond Extract
Directions
- Preheat the oven to 180C.
- Roll out the puff pastry to 3mm thickness and cut into squares.
- Mix all ingredients of the frangipane together and add a small amount to the centre of each square (the frangipane will spread as it cooks so don’t add too much). Sprinkle with raspberries.
- Bake in the oven for 20-25 minutes.
- Enjoy with a cup of tea!
