Who doesn’t love a cheesy baked tortilla that you can add whatever you like to?? Here’s a basic recipe for one person, which you can easily double, triple or quadruple!! Feel free to change up the ingredients, add in extras or take out those that you don’t love! As long as there’s cheese and tortillas, it’s a quesadilla! Plus – this recipe really helps to improve your knife skills!
Ingredients

- 2 Large Soft Tortilla Wraps
- 30g Cheddar Cheese, grated
- ¼ Onion
- ¼ Red Onion
- ½ Pepper
- 1/8 Courgette
- Handful Mushrooms
- 1 Tbsp Sweetcorn
Directions
- Preheat the oven grill to a medium heat.
- Finely slice your onions, pepper, mushrooms and courgette.
- Lay your two tortillas on a clean work surface. Sprinkle your grate cheese over one half of each of your tortillas and top with your vegetables – making sure they are evenly spread out. Fold the plain side of the tortilla over the cheese and vegetables and press down. Place both tortillas on a non-stick baking tray.
- Bake under the grill for 3 minutes and then turn over to bake on the other side for a further 3 minutes. The cheese should be melted and the vegetables will have softened.
- Place your quesadillas on a chopping board and cut in half, giving you two triangular pieces from each tortilla.
- Serve with your choice of guacamole, salsa, sour cream or just as they are.
