Let’s face it, the best thing about a party is usually the cake… no? Eating cake is great, and so is decorating! I’ll never forget my sister asking for 5 birthday cakes (homemade, of course) for her 5th birthday, just so that she could decorate them all with sweets… decorating is just so much fun!
Ingredients
For the Cake:
- 250g Butter, room temp
- 250g Caster Sugar
- 3 Eggs
- 250g Self Raising Flour
- Choice of additional ingredients e.g. Cocoa Powder, Lemon Zest/Juice, Cherries, Orange Zest/Juice, vanilla extract, etc
For the buttercream:
- 125g Butter
- 250g Icing Sugar
- Choice of flavourings & Decorations
Directions
- Preheat the oven to 180ᵒC. Line and grease a 22x22cm square tin/ 20x30cm rectangular tin with butter.
- In a large bowl, whisk together the butter and sugar until pale and creamy.
- Add the eggs one by one, thoroughly mixing between each addition.
- Sift in the flour and fold it into the mixture using a spatula.
- ADD ADDITIONAL INGREDIENTS HERE.
- Divide the mixture between the cake tins, using the spatula to evenly smooth it out.
- Bake the cakes in the middle of the oven for 25-30 minutes until risen and golden. Use a skewer to check that the cake is cooked all the way through. Set aside to cool.
- Whilst the cakes are cooling, prepare your topping.
- To make the buttercream; add the butter to a large bowl.
- Start by adding a small amount of icing sugar. Stir until smooth.
- Continue adding icing sugar and stirring until you have used it all.
- Flavour your buttercream with something to suit your tray bake.
- Use a spatula to spread the buttercream onto the top of your cake and decorate.
