I love pancakes and as much as I appreciate that we have a day to celebrate them.. I think they deserve to be eaten much more often! We eat them plenty in our house. Fill these pancakes with sweet or savoury fillings and you’ll be satisfied either way… They also work perfectly well either gluten free or dairy free (we used oat milk)!
Ingredients
- 200g Plain flour
- 400ml Milk
- 2 Eggs
- Cooking Oil
Directions
- Sift the flour into a large bowl and make a well in the centre. Add the eggs to the centre of the flour. Whisk up the eggs and slowly bring in some of the flour. Continue gradually incorporating the flour until the batter is thick.
- Start pouring the milk, little at a time, over the batter to loosen it up.
- Continue adding the flour and repeat these steps until all of the flour and milk have been incorporated. (This process ensures that no lumps form in the batter)
- Heat a little cooking oil in a large saucepan over a medium heat. Swirl the oil around and then pour any excess into a mug and keep to one side.
- Pour in enough pancake batter to form a thin layer over the pan, swirling quickly after adding to make a perfectly round pancake. Cook until the pancake becomes golden brown underneath. Use a spatula to flip the pancake and cook again until golden brown. Place the pancake on a plate and repeat steps for remaining batter.
