Mini Carrot Cake Loaves

Does carrot cake actually contain carrot? A question I’m always asked when we make it! Yes, it does, but that doesn’t mean it’s any less yummy then any other cake… in fact the carrots make it deliciously moist! I personally think the combination of a cinnamon spiced carrot cake and orange icing taste amazing together so I hope you like it! You can find mini disposable loaf cases online or in stores such as hobby craft or home bargains OR you can buy mini loaf trays OR you can just make these into cupcakes 🙂

Ingredients

Makes 6 Individual

For the Carrot Cake

  • 200g Grated Carrot
  • 100g Raisins
  • 2 Eggs
  • 115g Caster Sugar
  • 100ml Vegetable Oil
  • 1 Tsp Vanilla Extract
  • 1 Tbsp Orange Zest, grated
  • 100g Plain Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Cinnamon

For the Orange Cream Cheese Icing

  • 100g Cream Cheese
  • 60g Butter, soft
  • 500g Icing Sugar, sifted
  • 1 Tbsp Orange Zest, grated

Directions

  1. Preheat the oven to 180ᵒC and lay out 6 disposable mini loaf cases.
  2. In a large bowl, whisk together the eggs, sugar, oil, vanilla extract and orange zest.
  3. Sift the flour, baking powder and cinnamon into the wet mixture and stir.
  4. Fold the carrots and raisins into the mixture using a spatula.
  5. Carefully spoon the mixture into the loaf cases, filling them two-thirds full.
  6. Bake them in the oven for 25 minutes until they’re dark golden brown and spongy. Place them on a wire rack to cool.
  7. For the icing; Place all ingredients in a large mixing bowl. Use an electronic hand mixer to whisk the ingredients together until smooth and pale (cover with a tea towel to prevent the icing sugar from covering the kitchen!).
  8. Once cool, top with orange cream cheese icing and sprinkle with cinnamon.
