Marshmallows aren’t the easiest treat to make, so this recipe will require lots of adult supervision and a helping hand. However, the method is fun and when you get to the end result you won’t even believe you made them! Colour them with a drop of food colouring or flavour them with your choice of extract!
Ingredients
- 10 Sheets Gelatine (Dr Oetker)
- 350ml Water
- 500g Caster Sugar
- 1 Tbsp Liquid Glucose
- 1 Tsp Vanilla Extract
- 50g Icing Sugar
- 50g Cornflour
- Oil, for greasing
Directions
- Separate the leaves of gelatine and tip into a glass bowl. Pour over 150ml of boiling water and stir until the gelatine has completely dissolved. Scrape the mixture into a large bowl.
- Tip the caster sugar and liquid glucose into a saucepan with 200ml water and vigorously boil until the mixture reaches 127C.
- Whisk the gelatine mixture with an electronic hand mixer and slowly pour in the sugar water. Add the vanilla extract and continue to whisk on high for 8 minutes until the mixture is thick and shiny.
- Lightly grease a 20x20cm tin. Use a greased spatula to scrape the mixture into the tin and level it out.
- Leave to rest for an hour and then loosen the edges with a knife and turn out onto a worksurface dusted with cornflour. Use a knife dipped in water to cut the marshmallow into squares and dust with icing sugar.
