Macaroni Cheese is the PERFECT comfort food (if you love cheese!) and it’s super quick and easy to make! You don’t NEED to put this under the grill so if you’re in a rush it will still be really tasty but as it’s traditional I’ve just added it in there.
Ingredients

- 150g Macaroni
- 40g Butter
- 40g Flour
- 300ml Milk
- 25g Cheddar Cheese, grated
- 25g Double Gloucester Cheese, grated
- Salt and Pepper
Directions
- Bring a small-medium saucepan of water to the boil. Add the macaroni and cook for 8-10 minutes until soft.
- Meanwhile, melt the butter in another small saucepan over a low heat. Add the flour and stir with a wooden spoon for 1 minute. Remove the pan from the heat. Pour a small amount of the milk into the pan and stir thoroughly. Continue adding the milk a small amount at a time. Once all of the milk has been added, return the pan to the heat.
- Bring the sauce to the boil and stir continuously. Lower the heat and allow the sauce to simmer for 2 minutes. Stir in 3/4 of the cheese until completely melted.
- Drain the pasta and stir into the sauce.
- Heat the oven grill to a medium-high setting.
- Pour the macaroni cheese into an oven proof dish and sprinkle over the remaining cheese.
- Place the dish onto a baking tray and put under the grill for a few minutes until the cheese melts and the top becomes golden brown.
