Loaded Potato Skins

Be creative as you like with these loaded potato skins – perfect for using up left overs from the fridge! Let your children choose their own fillings and make them themselves.. Just don’t get them mixed up in the oven!!

 

Ingredients

  • 1 large or a few small potatoes
  • Salt and Pepper
  • Fillings of your choice
  • Cheese for topping (optional)

Directions

  1. Preheat the oven the 200ᵒC.
  2. Use a fork to prick holes in your potatoes to allow air under the skin and prevent them from exploding. Sprinkle with salt to crisp up the skin. Bake in the oven for up to one hour, depending on the size of the potato, until cooked through. Reduce oven temperature to 180ᵒC.
  3. Allow the potatoes to cool completely before slicing in half lengthways.
  4. Scoop out the soft centres, leaving about half a centimetre around the skin. Place in two bowls and set aside. (One half will be used to fill the skins and the other can be discarded or used for something else).
  5. Choose the fillings you’d like in your potato skins and prepare them by finely chopping/ tearing/grating etc and add to the bowl with the potato you scooped out. (If using cheese, you might want to keep some aside to top with). Mix together well and season with salt and pepper. Use a teaspoon to add the filling to the skins and lightly press. Sprinkle the top with cheese, if using.
  6. Carefully place the skins onto a baking sheet and bake in the oven for 10-15 minutes to heat the filling through and melt the cheese.
  7. Remove from the oven and allow to cool slightly before eating.
