I love lemon and white chocolate! When I make a batch of these, I could easily finish them all off. The decorations may look effective but they are really simple, and you don’t have to follow how I’ve done them, be creative.
Ingredients
For the Biscuits:
- 125g Unsalted Softened Butter
- 75g Caster Sugar
- 1 Tablespoon Lemon Zest
- 180g Plain Flour
For the Decoration:
- 100g White Chocolate
- Yellow Food Colouring
Directions
- Preheat the oven to 180c/160Fan.
- In a mixing bowl, cream together the softened butter with the sugar and lemon zest, using a wooden spoon.
- Sieve the flour and combine with the other ingredients. Use your hands to bring the mixture together, similar to a pastry.
- Lightly flour a clean work surface and knead the dough slightly to give it an even texture.
- Roll the dough out to about 5mm thick. Use a round cutter to shape the biscuits and place them on a non-greased baking tray.
- Bake the biscuits in the middle of the oven for 15 minutes.
- Remove the biscuits from the oven and allow them to cool before decorating them. (Once removed, they will still be soft – they will firm up whilst cooling).
- Melt all of the white chocolate over simmering water. Once the chocolate has fully melted, set it aside to cool.
- Dip the cooled biscuits half way into the slightly cool white chocolate and place on a piece of baking paper.
- Once you’ve dipped all of the biscuits, use the food colouring to colour the remaining white chocolate. Use a drop of oil to loosen the chocolate up to give it a good pouring consistency. Use a small spoon to drizzle the coloured chocolate over the biscuits, or if you’re up for a challenge, use a piping bag to pipe the decoration onto the biscuit. Leave the biscuits for about an hour for the chocolate to set.
- Once the chocolate has set, peel the biscuits off of the paper and enjoy with a cup of tea.
