Lemon and Blueberry Charlottes

Suitable for all ages, these lemon and blueberry charlottes are super easy to make and really tasty! Ready to eat in as little as 15 minutes.

Ingredients

  • 1 Pack Sponge Fingers
  • 1/2 Lemon, zest and juice
  • 125g Cream Cheese
  • 200g Custard
  • 100g Blueberries

Directions

  1. Cut the sponge fingers in half and neatly arrange into 12 ramekins, or bowls.
  2. Mix together the lemon juice, zest, cream cheese and custard.
  3. Evenly spoon the mixture into the centre of the ramekins.
  4. Decorate with blueberries.
  5. Place into the fridge until needed.
