Lebanese Cheese Parcels

I’ll admit this is a recipe taken from the Leiths ‘How to Cook’ book, which cannot be bettered. However, I have simplified it so that it can be ‘ready in an hour’ and easy for children to follow. Buying ready made puff pastry is almost as good as homemade, plus it saves a lot of time. The filling is delicious and lightly and the pastry is buttery and crisp.

Ingredients

  • 500g puff pastry
  • Plain flour, to dust
  • 1 egg

For the filling:

  • 100g full-fat cottage cheese
  • 100g feta
  • 100g mozzarella
  • Zest of 1 lemon
  • Salt and Pepper

Directions

  1. Preheat the oven to 200°C.
  2. To make the filling, put the cottage cheese in a sieve set over a bowl, to drain. Discard the liquid and put the cheese in a bowl. Crumble the feta, tear the mozzarella and add them to the bowl. Add about 1/2 tsp of lemon zest, salt and pepper. Mix all together and taste.
  3. Lightly dust your work surface with flour and roll out the pastry to about 3mm thickness. Choose a circular cookie cutter and cut as many circles out of the pastry as you can. Divide the filling between the circles, placing it in the middle of the circle and leaving a border around the edge.
  4. Lightly beat the egg using a fork. Brush a little around one side of each pastry circle. Fold each circle in half, encasing the filling, seal using a fork to make half-moon shaped parcels with ridged edges.
  5. Transfer to a lined baking tray and brush with a little more of the beaten egg to glaze.
  6. Bake in the oven for about 15 minutes until puffed up and golden.
