Jammie Dodgers

I loved Jammie Dodgers as a child, in fact, I wouldn’t turn one down now! These can be so much fun to make because you can chose any shape to make them into and any type of jam you fancy. Watching the jam come through the holes as you sandwich them together at the end is super fun for kids! Just make sure you don’t roll them too thin as it will make them tricky to handle without breaking.

Ingredients

  • 125g Unsalted Softened Butter
  • 75g Caster Sugar
  • 180g Plain Flour
  • Seedless Strawberry Jam/ Any jam of preference

Directions

  1. Preheat the oven to 180c/160Fan.
  2. In a mixing bowl, cream together the softened butter with the sugar, using a wooden spoon.
  3. Sieve the flour and combine with the other ingredients. Use your hands to bring the mixture together, similar to a pastry.
  4. Lightly flour a clean work surface and knead the dough slightly to give it an even texture.
  5. Roll the dough out to about 5mm thick. Choose a cutter to shape the biscuits – use the same shape for all of them. Place half of them onto a non-greased baking tray. For the other half, cut a small shape out of the centre of the biscuits and then also place on baking trays.
  6. Bake the biscuits in the middle of the oven for 10 minutes.
  7. Remove the biscuits from the oven and allow them to cool before decorating them. (When removed they will still be soft – they will firm up whilst cooling).
  8. When the biscuits are cool, spread a little jam over the base (the side without the hole) and press the tops on, sandwiching them together. If you want a smoother finish, heat the jam in a saucepan over a low heat and stir to remove any lumps – just be careful as the jam can get very hot!
