If you haven’t had a steamed pudding for a while (or ever!) then you’re missing out! They can be so versatile with different flavours – I mean, you can even make a four different ones in one batch… and then taste them all!
Ingredients
- 4 tbsp Golden syrup/ Chocolate Spread/ Jam/ Lemon Curd
- 100g Self-raising flour (plus 1 TBSP cocoa powder if you want to make chocolate puddings)
- ¼ tsp Salt
- 75g Caster sugar
- 65g Butter, at room temperature
- 1 Large egg
- 3 tbsp Milk
- ½ tsp Vanilla extract
Directions
- Lightly grease four individual pudding ramekins with butter and then add 1 tbsp golden syrup (or alternative) to each ramekin.
- Add the remaining ingredients to a medium sized bowl and mix together until smooth and creamy.
- Spoon the mixture into the ramekins, making sure they’re all the same and fill to just below the tops. Cover each one tightly with a piece of foil and secure with an elastic band.
- Bring a large, wide pan filled with a couple of inches to boil. Place the ramekins in the water (the water should come 2/3rds up the ramekins), put on the lid and steam steadily for 30-35 minutes. Top up with water when needed.
- Carefully turn out the puddings and serve with custard or ice cream… yum!
