Individual Steamed Puddings

If you haven’t had a steamed pudding for a while (or ever!) then you’re missing out! They can be so versatile with different flavours – I mean, you can even make a four different ones in one batch… and then taste them all!

Ingredients

  • 4 tbsp Golden syrup/ Chocolate Spread/ Jam/ Lemon Curd
  • 100g Self-raising flour (plus 1 TBSP cocoa powder if you want to make chocolate puddings)
  • ¼ tsp Salt
  • 75g Caster sugar
  • 65g Butter, at room temperature
  • 1 Large egg
  • 3 tbsp Milk
  • ½ tsp Vanilla extract

Directions

  1. Lightly grease four individual pudding ramekins with butter and then add 1 tbsp golden syrup (or alternative) to each ramekin.
  2. Add the remaining ingredients to a medium sized bowl and mix together until smooth and creamy.
  3. Spoon the mixture into the ramekins, making sure they’re all the same and fill to just below the tops. Cover each one tightly with a piece of foil and secure with an elastic band.
  4. Bring a large, wide pan filled with a couple of inches to boil. Place the ramekins in the water (the water should come 2/3rds up the ramekins), put on the lid and steam steadily for 30-35 minutes. Top up with water when needed.
  5. Carefully turn out the puddings and serve with custard or ice cream… yum!
