A childhood favourite and really fun recipe to make! We loving making colourful foods and you can’t get much more colourful than these!! P.S. the black specs you can see on the biscuits are from vanilla bean paste, which we use as vanilla extract – it has so much more flavour, we definitely recommend trying it!
Ingredients
- 115g Unsalted Butter at room temperature
- 60g Caster Sugar
- ½ Tsp Vanilla Extract
- 180g Plain Flour
- 500g Royal Icing Sugar
- Food Colouring of choice
Directions
- Preheat the oven to 160ᵒC and line two baking trays with greaseproof paper.
- In a mixing bowl, cream together the butter with the sugar and vanilla extract using a wooden spoon. Pour in the flour, stir to combine and then use your hands to bring together.
- Lightly flour a clean work surface and knead the dough slightly to give it an even texture. Roll the dough out to about 5mm thick. Use the thick end of a piping nozzle to cut the biscuits into small circles and lift them (using a palate knife if they’re a little stuck) onto the baking trays.
- Bake the biscuits in the middle of the oven for about 10 minutes until lightly golden.
- Remove the biscuits from the oven and allow them to cool before decorating (when removed, they will still be soft – they will firm up whilst cooling).
- Sift the icing sugar into a large bowl and add 1-2tbsp of cold water to it until you have a very thick pipeable icing. Colour with a drop of food colouring of your choice. Use a piping bag with a small star nozzle to pipe the icing on to each biscuit. Allow to set for 20 minutes or enjoy as they are (I couldn’t resist!).
