Homemade Pasta

Pasta always tastes better fresh and is great fun to make. This recipe is super easy and makes lovely fresh pasta. Plus, it only takes a few minutes to cook, so prepare a sauce before shaping your pasta and it will be ready in no time!

Ingredients

  • 200g ‘00’ Flour, plus extra to dust
  • 2 Large Eggs
  • 1/2 Tbsp Olive Oil

Directions

  1. Use a food processor to combine the ingredients. Make sure you only pulse the ingredients until they begin to stick together. The mixture should have formed tiny balls, similar looking to couscous. Feel the pasta by squashing a little together with your finger and thumb. If the pasta feels dry then add a teaspoon of egg, pulse again and continue to do so until the pasta feels moist.
  2. Lightly flour a clean surface. Remove the blade from the food processor and then use your hands to press the pasta together and lift onto the work surface. Knead the dough until it looks smooth and feels a little stretchy. This will take you about 5 minutes.
  3. Wrap the dough tightly in Clingfilm and leave to relax at room temperature for at least 45 minutes. (You can make the pasta in advance and keep it in the fridge, but you must remove it from the fridge 20 minutes before rolling it out).

 

If you have a pasta machine at home, you can use it to make spaghetti, tagliatelle or roll it thin to make a stuffed pasta. Alternatively, use a rolling pin to roll the pasta really fine (when holding the pasta, you should be able to see your hands through it).
