Greek Meze

A platter of the best Greek dishes… Flatbread, Hummus, Tzatziki and Halloumi and Vegetable Skewers… Yum!

Ingredients

Flatbread

  • 250g Strong Bread Flour, plus extra for dusting
  • 1 Tsp Salt
  • 7g Fast Action Dried yeast
  • 150ml Warm Water
  • Vegetable Oil, for greasing

Directions

  1. Stir together the flour, yeast and salt in a large bowl.
  2. Pour about 140ml of the warm water into the flour mixture. Use a cutlery knife to quickly stir the water into the flour. Where the mixture looks dry, add some of the remaining water and stir until the dough comes together.
  3. Dust a clean work surface with flour. Bring the dough together in your hands and knead the bread dough until it is smooth and it springs back when you press it.
  4. Lightly oil a large bowl and place the dough inside. Cover with Clingfilm and leave the dough to rise for about an hour, until it has doubled in size.
  5. Preheat the oven to 180ᵒC.
  6. Once it has risen, knock the dough back (knead it again). Separate into 5 even sized pieces, knead each until smooth and then roll out to 3mm thick.
  7. Place each flatbread onto a lightly floured tray.
  8. Bake in the oven for 8-10 minutes (turning half way through) until crisp. Remove and cut into slices.

Ingredients

Hummus

  • 1 x 400 g tin of chickpeas
  • 1 small clove of garlic, crushed
  • ½ Tsp ground cumin
  • Juice of 1 lemon
  • Olive oil
  • Salt and pepper

Directions

  1. Drain and rinse the chickpeas in a sieve over the sink.
  2. Blitz the chickpeas in a food processor (or use a hand whisk) until smooth.
  3. Add the garlic to the chickpeas and blend well.
  4. Season your hummus with lemon juice, olive oil and salt & pepper, by adding a little bit of each at a time.
  5. Taste and adjust seasoning as you go along.

Ingredients

Tzatziki

  • 100ml Greek yogurt
  • 1/2 cucumber
  • 1-2 Tbsp lemon juice
  • 1 garlic clove, crushed
  • Olive oil
  • Salt and pepper
  • 5 fresh mint leaves

Directions

  1. Peel, de-seed and grate the cucumber.
  2. Combine the yoghurt, cucumber, lemon juice and garlic in a large bowl. Add a dash of olive oil and season with salt and pepper.
  3. Cover and place in the fridge for a couple of hours to enhance the flavours.
  4. Before serving, roughly chop a few mint leaves and sprinkle them on top.

Ingredients

Halloumi Skewers

  • 75g Halloumi, per person
  • Choice of veg (e.g. onion, peppers, mushroom, courgette, aubergine)

Directions

  1. Preheat the oven to 200ᵒC.
  2. Cut the halloumi into medium-small (3x3cm) cubes.
  3. Choose your vegetables and cut them to a similar size to the halloumi.
  4. Push the halloumi and vegetables onto two damp skewers, making sure everything is evenly spread out, without too much of a gap in between.
  5. Place the skewers onto a lined baking tray.
  6. Cook the skewers in the preheated oven for 10 minutes. Turn the skewers over after 5 minutes to make sure they cook evenly.
