Gluten Free bread is SO hard to perfect!! But, flatbread CAN be mastered! Try out this recipe and let me know what you think! I buy my glutinous rice flour from an Asian supermarket but please ask me if you’re struggling 🙂
Ingredients
Makes 10 Mini Flatbreads
- 250g Gluten Free Flour Blend
- 1 Tsp Xanthan Gum
- 40g Glutinous Rice Flour
- 1 ½ Tsp Baking Powder
- 1 Tsp Salt
- 1 Tbsp Vegetable Oil
- 1 Egg, plus 1 Egg White, beaten
- 170ml Milk
Directions
- Preheat the oven to 200áµ’C and line two baking trays with lightly oiled baking paper.
- In a large bowl, stir together the flours, xanthan gum, baking powder and salt with a cutlery knife. Pour in the oil, eggs and milk and stir until you have a thick dough.
- On a lightly floured work surface, bring the dough together and then separate into 10 pieces. Roll each piece into a small ball and then press gently to flatten. Use a floured rolling pin to roll each piece to ½ cm thick.
- Spread the flatbreads out over both baking trays, allowing room for expansion, and bake in the oven for two minutes. Remove from the oven, flip each flatbread over and then bake for a further minute.
- Remove from the oven and top with cheese or garlic butter or caramelised onions.. or all three!!
