The sun is coming out and we feel like eating light and healthy foods all of a sudden. These chilli and garlic prawns are perfect for a light lunch with a piece of crusty bread or a leafy salad. They also work wonders as a starter for those summer dinner parties we’ll soon be having. Plus, they’re super quick and easy!
Ingredients
- 150g Raw King Prawns, shelled
- 1 Small Mild Red Chilli
- 2 Medium Cloves of Garlic
- Handful Fresh Parsley
- 25g Butter
- Juice of ½ Lime
Directions
- Finely chop the Chilli and Garlic into even sized pieces. Finely chop the parsley and juice the lime.
- Heat the butter over a medium-high heat in a frying pan, until sizzling. Add the chilli and garlic and continuously stir for 1 minute over a medium heat. Be careful that the garlic doesn’t catch and become brown.
- Add the lime juice and increase the heat. Taste and add salt and pepper.
- Add the prawns and sauté until they become pink.
- Remove the pan from the heat and stir through the chopped parsley.
- Serve immediately.
