Something warm and comforting for the winter, that can introduce you to fish in a different way! We love covering the top in cheese, which crisps up beautifully in the oven over the creamy mash! We add peas and sweetcorn to the pie so that the fish isn’t completely overwhelming! Get the kids involved in making it and they’ll be happy to try it!
Ingredients
- 1kg Baking Potatoes
- 25g Butter, plus a knob for mashed potato
- 25g Flour
- 400ml Milk, plus a splash
- 400g Fish Pie Mix (Salmon/Cod/Haddock/Prawns)
- 1 Tsp Dijon Mustard
- Small Handful Spring Onions
- Small Bunch Chives
- Handful Frozen Peas
- Handful Frozen Sweetcorn
- 50g Cheddar Cheese
Directions
- Heat the oven to 200ᵒC. Use a fork to prick your potatoes and place on a baking tray in the oven. Bake for about one hour until and cutlery knife can be inserted easily.
- Meanwhile, in a large saucepan over a medium heat, melt the 25g butter and stir in the 25g flour to make a roux. Remove from the heat and pour in the milk gradually, whisking at the same time, until you have a lump free sauce. Place back on a medium-low heat and whisk until the sauce has heated and begins to thicken. Cook for a couple of minutes until the sauce coats the back of a spoon.
- Remove from the heat and stir in the mixed fish and Dijon mustard.
- Finely chop the spring onions and chives. Add both into the sauce, along with the peas and sweetcorn. Grate the cheese.
- Cut the potatoes in half, scoop out the insides and place in a large heatproof bowl or saucepan. Add a knob of butter and splash of milk and stir. Season with salt and pepper.
- Pour the fish sauce into a large oven proof dish, top with the mashed potato and then sprinkle over the cheese.
- Bake in the oven for 20-25 minutes until boiling hot, crisp on top and the fish is cooked through.
