Eton Mess

Fun for children of all ages, with a chance to be creative and make their desserts look unique and individual. I use raspberries rather than strawberries in this recipe as they make a nice rippling effect in the cream, but feel free to switch it up.

Ingredients

Makes Six

  • 6 Meringue Nests
  • 300ml Double Cream
  • 150g Raspberries
  • 1 Tsp Icing Sugar

Directions

  1. Whip the cream to soft peaks (until it just holds its shape).
  2. Add a teaspoon of icing sugar and whisk again for 10 seconds.
  3. Add the raspberries to the cream bowl and stir them through.
  4. Design the Eton Mess’s in 6 bowls using the meringues and cream as you like – be creative!
  5. Keep in the fridge until ready to eat.
