This might not be the traditional way of making a paella but it sure does taste good! The chorizo gives it a lovely flavour but feel free to add different or additional meats if you please š
Ingredients
- 500g Paella Rice
- 200g Chorizo, diced
- 3 Tbsp Tomato Puree
- 2 Peppers (red&yellow)
- Ā½ Red onion
- 2 Garlic Cloves, crushed
- 1 Tbsp Vegetable Oil
- 1LitreĀ Vegetable Stock
- Salt and Pepper
Directions
- Finely chop the red onion and peppers. In a large pan, heat the vegetable oil over a medium-high heat. Fry the onion and peppers until beginning to brown. Add the garlic and chorizo and cook for a further 1 minute. Add the tomato puree and stir well.
- In a sieve, rinse the rice until the water runs clear and then add the rice to the pan and stir. Pour in half of the vegetable stock and bring to boil. Continuously stir and addĀ theĀ remaining stockĀ bit at a time until the rice is cooked. Taste and Season.
