Creative Cereal Bars

These cereal bars can be made as healthy or unhealthy as you’d like, with ingredients that you enjoy. You could make them 10 times over and they could be completely different every time but always taste amazing! Ingredients

  • 125g Honey/ Golden Syrup/ Agave Syrup/ Coconut Syrup/ Date Syrup
  • 100g Butter/ Vegetable Spread/ Coconut Butter
  • 150g Oats
  • 50g Cereal e.g. Rice Krispies/ Coco Pops/ Sugar Puffs/ Cheerios/ Cornflakes/ Frosties/ Something Similar
  • 50g Dried Fruit e.g. Raisins/ Sultanas/ Currants/ Chopped Apricots/ Cranberries/ Blueberries/ Mixed Peel
  • 25g Seeds of your choice (optional)
  • 10g Desiccated Coconut (optional)
  • 5g Freeze Dried Fruit (optional)
  • 75g Chocolate Chips (optional)

Directions

  1. Preheat your oven to 180°C/170°C Fan and line a 20cm square cake tin or similar with greaseproof paper. Cut an extra piece of greaseproof the size of your tin and set aside for later.
  2. Pour the honey/ syrup and add the butter into a small heatproof bowl. Either, place over a small saucepan of simmering water OR microwave for 30 second intervals until the butter has completely melted.
  3. In a large mixing bowl, stir together the oats, cereal, dried fruit, seeds (if using), coconut (if using) and freeze dried fruit (if using).
  4. Pour the wet mixture into the dry mixture and stir. Once evenly mixed, add in the chocolate chips (if using) and briefly stir.
  5. Spoon the mixture into your prepared tin and spread out evenly. Now, place your extra piece of greaseproof paper over the top and use your hands to press down all over and flatten to make your cereal bars really compact.
  6. Remove the greaseproof paper from the top and bake in the middle of the oven for 10-15 minutes (depending on the size of your tin – if the mixture is shallow it should take 10 minutes, if it’s deeper it should take 15). The bars will be cooked when they are lightly golden on top. They should feel slightly soft and sticky but not doughy. Allow them to cool for a few minutes and then place in the fridge to cool completely (cutting when completely cooled will give your cereal bars nice sharp edges). Once cool, cut into bars and store in an airtight container, between sheets of greaseproof paper, for up to a week.
