I’ve never really been a fan of sweetcorn – however, I am a massive fan of sweet, creamy things and this is exactly that! I noticed how popular it was during a trip to the US a few years ago and just had to try it out myself. You won’t be disappointed!
Ingredients
- 50g Butter
- 1 Onion, finely diced
- 200g Frozen Corn
- 1 Tsp Sugar
- 125ml Single Cream
- 50g Cheddar Cheese
Directions
- Heat the butter in a medium saucepan until melted and starting to simmer. Add the onions and stir. Reduce the heat and cook for 5 minutes until the onions have softened. Add the corn along with 100ml water and leave to simmer for 10 minutes.
- Pour in the single cream, add the sugar and season with salt and pepper. Cook until bubbling and then stir in the cheese just before serving.
