Creamed Corn

I’ve never really been a fan of sweetcorn – however, I am a massive fan of sweet, creamy things and this is exactly that! I noticed how popular it was during a trip to the US a few years ago and just had to try it out myself. You won’t be disappointed!

Ingredients

  • 50g Butter
  • 1 Onion, finely diced
  • 200g Frozen Corn
  • 1 Tsp Sugar
  • 125ml Single Cream
  • 50g Cheddar Cheese

Directions

  1. Heat the butter in a medium saucepan until melted and starting to simmer. Add the onions and stir. Reduce the heat and cook for 5 minutes until the onions have softened. Add the corn along with 100ml water and leave to simmer for 10 minutes.
  2. Pour in the single cream, add the sugar and season with salt and pepper. Cook until bubbling and then stir in the cheese just before serving.
