So, I don’t know about you, but I’m really fed up of this cold weather! My mum is the same, so I thought I’d make a tropical themed cake to make us feel happy and warm in our bellies. I hope it does the same for you!
Ingredients
For the cake:
- 250g Butter, room temp
- 250g Sugar
- 4 Eggs
- 200g Self Raising Flour
- 50g Desiccated Coconut
To Decorate:
- 100g Butter, room temp
- 400g Icing Sugar
- Juice of 2 Limes, plus grated rind of 1 Lime and Zest of 1 Lime
- Chocolate and Desiccated Coconut to decorate
Directions
1. Preheat the oven to 180ᵒC. Grease and line either two or three 8” round cake tins, depending on the overall look you want to achieve.
2. In a large bowl, cream together the butter and sugar. One by one, add the eggs and combine well after each addition.
3. Sieve the flour into the bowl, add the desiccated coconut and use a spatula to fold into the mixture.
4. Evenly divide the mixture between your cake tins and use the spatula to spread it out neatly.
5. If making three cakes, bake in the middle of the oven for 15 minutes or if making two, bake for 20 minutes.
6. To make the buttercream: In a large bowl, combine the butter, lime juice and icing sugar (sieved) by using an electric hand whisk until the mixture is pale and creamy. I separated my icing into 2/3s and 1/3. I then added the grated rind of lime to the 2/3s for a kick inside the cake and to keep 1/3 smooth for the top of the cake. However, feel free to be creative!
7. Remove the cake from the oven and leave to cool completely.
8. Once cool, layer the cake with the buttercream, decorate how you like and enjoy!
