Citrus Curd

Lemon Curd is one of my favourite things to spread on toast and so easy to make yourself! But why stop there… try making lime or orange curd for something different.

Ingredients

Makes enough to serve 3-4 people/ to fill a small jar

  • 2 Lemons/ Limes/ Oranges
  • 85g Granulated Sugar/ Caster Sugar
  • 40g Butter/ Margerine/ DF Butter
  • 2 Eggs

Directions

  1. Finely grate the zest of your chosen fruit onto a plate/board, cut the fruit in half and juice into a small bowl and pick out any pips/seeds. Pour the juice and add the zest into a small saucepan. Stir in the sugar and butter using a wooden spoon.
  2. In another small bowl, crack the eggs and whisk with a fork to combine the whites and yolks. Then, add to the saucepan.
  3. Place the saucepan over a low heat and stir until the butter and sugar have melted. Then, turn up the heat to  medium-high to bring to the boil.
  4. Boil for about 1 minute, stirring occasionally. Pour through a sieve into a small-medium sized bowl that the sieve fits over nicely. Taste and add a little more sugar if you find it too sharp. Allow the curd to cool slightly before serving and pouring into a jar/ramekin. If you don’t eat it all at once (we couldn’t resisit!) keep it cool in the fridge and enjoy within a couple of weeks.
