Chow Mein

Perfect recipe for using up store cupboard ingredients and the vegetables in the bottom of your fridge! Add in as many different vegetables as you like and even throw in some meat. Enjoy this as a side or a main.

Ingredients

  • 5cm piece fresh ginger, grated
  • 2 garlic cloves
  • 3 tbsp tomato ketchup
  • 2 tbsp oyster sauce
  • 2 tbsp reduced-salt soy sauce
  • 1 Small onion
  • 1 large red pepper
  • 200g beansprouts
  • 3 nests medium egg noodles
  • 1 tbsp vegetable oil

Directions

  1. In a small bowl, combine the ginger, garlic, ketchup, oyster sauce, soy sauce and 3 tbsp water.
  2. Cut the onion and pepper into bite sized chunks and remove any brownish beansprouts.
  3. Bring a large saucepan over water to the boil and drop in the noodles. Turn down the heat and leave to simmer for 4 minutes. Drain the noodles in a colander.
  4. Heat a large saucepan or wok (if you have one) until it begins to smoke. Add the tbsp of oil, followed by the onion and pepper and stir fry for two minutes. Pour in your sauce and stir until bubbling. Add the noodles and beansprouts and toss in the sauce until well coated.
