Not one for the diets, but definitely one to make you feel better. These rich chocolate brownies are perfect for indulging on. You can serve them warm with ice-cream or just snack on them with a cup of tea in front of the TV – They taste just as good either way.
Ingredients
- 300g Chocolate (a combination of dark and milk works well)
- 250g Butter/ Margarine
- 3 eggs
- 250g Brown Sugar/ Muscavado Sugar/ Golden Caster Sugar
- 85g Plain Flour + 1 Tsp Baking Powder/ 90g Self-Raising Flour
Directions
- Preheat the oven to 160ᵒc. Line a 20cm square cake tin or similar with greaseproof paper.
- Break the chocolate into small pieces and melt over simmering water in a heatproof bowl with the butter. Stir until smooth and set aside to cool slightly.
- Whisk up the eggs until pale and frothy using either a hand whisk or electric whisk. Add the sugar and continue whisking until you have a thick shiny mixture.
- Whisk the slightly cooled chocolate into the egg and sugar mix. Sift the flour and baking powder over the mixture and fold in with a spatula.
- Pour the mixture into your prepared cake tin.
- Bake in the centre of the oven for 35 minutes. Check by inserting a skewer – a few crumbs should stick to the skewer, but there should be no wet mixture. If they’re not quite ready, put them back in and check every 5 minutes.
- Remove the brownies from the oven and cool on a wire rack in the tin. Cool for at least half an hour before serving to allow them to set up. They will stay warm in this time.
