Chicken Burgers

Making fresh bread rolls is the most popular activity in my cookery course… and I can see why… the smell of homemade bread baking in the oven and enjoying it warm with lashings of butter… Or chicken and salad as we do here! These are VERY popular!

Ingredients

  • 500g Strong Bread Flour
  • 2 Tsp Salt
  • 7g Fast Action Dried yeast
  • 300ml Warm Water
  • Oil, for greasing
  • Egg Wash

 

  • 1/2 Chicken Breast per person
  • Your choice of seasoning (we like Cajun, Piri Piri, Mixed Herbs or Chilli)

Directions

  1. To make the bread rolls: Stir together the flour, yeast and salt in a large bowl.
  2. Pour about 250ml of the warm water into the flour mixture. Use a cutlery knife to quickly stir the water into the flour. The ingredients will come together in large flakes. Where the mixture looks dry, add some of the remaining water and continue to stir until all of the dough comes together.
  3. Dust a clean work surface with flour. Bring the dough together in your hands and place on the work surface. Knead the bread dough until it is smooth and it springs back when you press it.
  4. Lightly oil a large bowl and place the dough inside. Cover with a lightly oiled piece of Clingfilm and leave the dough to rise for about an hour, until it has doubled in size.
  5. Once it has risen, knock the dough back (knead it again) and then separate it into 10 even sized rolls.
  6. Use your hands to smooth the rolls and make sure they are perfectly round, or be creative with them by making other shapes.
  7. Place the rolls on a lightly oiled baking sheet, cover with oiled clingfilm and leave them to rise again for about 15 minutes.
  8. Preheat the oven to 200C.
  9. Check that the rolls are ready by poking your little finger into the side of one. If the hole you make remains, then the roll is ready to be baked.
  10. Brush the tops of the rolls with egg wash (this will give them a golden finish).
  11. Bake the rolls in the oven for 15 minutes or until they are golden and sound hollow when you tap them from underneath. (Leave the oven on for your chicken breasts)
  12. To prepare the chicken: Cut your chicken breasts in half widthways to create two pieces of chicken that look like they would fit in your rolls. Choose your seasoning and sprinkle over the chicken, then use your hands to rub the seasoning in. Place the chicken on a lightly oiled baking tray.
  13. Bake your chicken breasts in the preheated oven for 10 minutes. Then use a cutlery knife to cut through the thickest part of the chicken to make sure it is cooked – if not, place back in the oven for a few more minutes.
  14. Cut open your bread rolls and fill with the chicken breast, a little bit of salad and your choice of sauce. Enjoy!
