Bruschetta is a simple thing that can taste amazing, with the fresh flavour of the tomatoes and the rich garlic oil – you can’t really not like it!
Italian meaning for bruschetta = Toast
Ingredients
- 1 Baguette
- 50ml Olive Oil
- 2 Cloves Garlic, crushed
- 250g Cherry Tomatoes
- Fresh Basil
- Salt and Pepper
Directions
- Heat your oven grill to medium-high.
- Slice your baguette diagonally into thin (about 2cm) pieces. Place on a baking tray and toast under the grill until golden, turn over and toast on the other side.
- Combine the olive oil and crushed garlic and lightly brush onto each piece of bruschetta.
- Finely dice the cherry tomatoes, place in a bowl and toss in salt and pepper. Spoon a generous amount onto each piece of bruschetta and top with a basil leaf.
*Alternatively, top your bruschetta with Mozzarella/ Dried meats/ Olives/ Pesto/ Garlic/ Balsamic or whatever you fancy!
