Okra (also known as bhindi) is packed full of vitamins such as Potassium, Vitamin B, C, Folic Acid and Calcium – so it’s super good for you. Plus, it’s tasty and now more available in local supermarkets.
Ingredients
- 1 Onion
- 1 Garlic Clove
- ½ Tsp Cumin Seeds
- ½ Tsp Coriander Seeds
- ½ Tsp Chilli Powder
- ¼ Tsp Turmeric
- 150g Chopped Tomatoes
- 350g Okra
- Vegetable Oil
Directions
- In a dry frying pan, toast the cumin and coriander seeds over a medium heat for 2 minutes. Grind using a pestle and mortar until fine.
- Finely dice the onion, add a splash of vegetable oil to the same frying pan and cook the onion and spices over a medium heat for a few minutes.
- Stir in the tomatoes and garlic and allow to simmer. Chop the okra into thick slices and add into the frying pan. Allow to cook for 8-10 minutes to reduce the sauce and then season with a little salt.
