We LOVE making these biscuits because it does not matter what age you are, icing biscuits is fun and therapeutic! It’s good for your mind and then your tummy!! We’ve given some alternatives depending on what you have at home because we believe biscuits should be something you can make at all times!
Ingredients
- 115g Unsalted Butter (at room temperature)/ Margarine/ Vegetable Spread
- 60g Caster Sugar/ Golden Caster Sugar/ Light Brown Sugar
- ½ Tsp Vanilla Extract/ Alternative Extract of Choice/ 1 Tsp Lemon Zest, optional
- 180g Plain Flour/ Wholewheat Flour/ Gluten Free Plain Flour (plus extra for rolling)
- 200g Icing Sugar
- Food Colouring, optional
- Sprinkles/ other decorations, optional
Directions
- Preheat your oven to 180ᵒC and have two medium-large baking trays ready.
- In a large mixing bowl, cream together your butter and sugar with a wooden spoon until soft and smooth. Add in your flavour essence, if using.
- Sift in your flour and mix in with your spoon until your mixture looks similar to a crumble, with an even texture. Use your hands to bring together the dough in the bowl. If it feels a little dry, sprinkle a tiny bit of water over it and continue to knead it until it all comes together into a soft dough.
- Dust a clean worktop with flour, place your dough down on the worktop and spirnkle flour over the top as well as dusting some on a rolling pin. Very gently roll over your dough, backwards and forwards, turning it every so often in the beginning to make sure the flour remains underneath. When it starts to feel delicate, continue to roll out your dough, without turning it, to about 5mm thick. Use cookie cutters of your choice to cut shapes as close together as possible and then lift them onto your trays with a palette knife.
- Bake your biscuits in the centre of your oven for 10-15 minutes (depending on their size and thickness) until they are slightly golden. They will be slightly soft when removed from the oven so allow them to cool on the trays for 10 minutes before placing on a clean worktop to decorate.
- Meanwhile, sift your icing sugar into a medium sized mixing bowl and grab yourself a small bowl of cold water and a teaspoon. Add a spoonful of water at a time to your icing sugar until the icing just about drops off the spoon when you hold it up on its side.
- If you’d like to colour your icing, either add a drop of colour to your bowl OR seperate your icing into a few smaller bowls and colour each one differently. For a challenge, why don’t you try using piping bags to decorate your biscuits! Otherwise, a drizzle of colour and some sprinkles on top is just as pretty and fun! Just make sure your biscuits are cool before decorating and enjoy!!
