Sautéed potatoes served with a rich, spicy tomato sauce and eaten with cocktail sticks… what more could you want? I roast my potatoes as then I can be getting on with other things whilst they’re in the oven, but feel free to sauté them in a frying pan if you’d prefer.
Ingredients
- 1 small onion, finely diced
- 2 garlic cloves
- 1 Tin Chopped Tomatoes
- 1 tbsp tomato puree
- 2 tsp paprika
- Pinch of chilli powder
- Pinch of sugar
- 900g potatoes
- Olive oil
Directions
- Prepare the sauce: Heat a little oil in a pan, add the onion and fry for about 5 minutes until softened. Add the garlic, tomatoes, tomato purée, paprika, chilli powder, sugar and salt and bring to the boil, stirring until thick.
- Preheat the oven to 200ᵒC. Peel and cut the potatoes into small cubes. Place them in a bowl and sprinkle with oil, salt and pepper, toss to coat. Roast for 25-30 minutes, until the potatoes are crisp and golden.
- Tip the potatoes into small dishes and spoon over the tomato sauce. Serve with cocktail sticks.
