Individual Key Lime Pies

If you haven’t tried Key Lime Pie before then you are missing out.. and now is the PERFECT opportunity! This recipe is so simple, they can be made and eaten within 45 minutes easily! I buy really cool cardboard cake cases from Home Bargains to spritz them up a little – but nice dessert glasses or ramekins work just as well. Enjoy!!

Ingredients

  • 125g Digestive Biscuits
  • 20g Butter
  • 200ml Condensed Milk
  • 300ml Double Cream
  • Juice and Zest of 1/2 Limes
  • 150ml Whipped Cream

Directions

  1. Place the biscuits into a large bowl and use the end of a rolling pin to crush into fine crumbs. Meanwhile, melt the butter in a large saucepan over a low heat. Add the biscuit crumbs and stir until evenly coated in butter.
  2. Fill the bottoms of 6 ramekins/cake cases with the biscuit.
  3. Poor the condensed milk and double cream into a large bowl and stir together with a large spoon. Add the lime juice to the cream mixture until it becomes thick.
  4. Spoon the mixture into the ramekins/cases, making sure they are all even. Top with whipped cream and a sprinkle of lime zest. Place in the fridge to set up (as little as 20 minutes).
