Individual Banoffee Pies

Banoffee Pie is a classic dessert, many people’s favourite and if you’ve never made it, you’ll be surprised at just how easy it is to make! Get your children involved, or let them get on with the whole thing. Super fun and super tasty!

Ingredients

Makes 10-12 Individual Portions

  • 75g Butter
  • 200g Digestive Biscuits
  • 397g can Condensed Milk
  • 100g Butter
  • 100g Soft Dark Brown Sugar
  • 3 Bananas
  • 300ml Double Cream
  • Grated Chocolate

Directions

  1. Place the digestives in a large sealable sandwich bag, releasing all of the air, and use a rolling pin to break them into crumbs. Meanwhile, melt the 75g of butter over a medium heat in a saucepan. In a large bowl, add the hot melted butter to the crumbs and stir to combine. Spoon the base into individual glasses/ramekins.
  2. Melt the 100g of butter and sugar in a saucepan over a low heat. Make sure the sugar has completely dissolved before adding the condensed milk. Once the condensed milk is added, bring to boil for one minute, stirring constantly – this will thicken the toffee sauce. Spoon the toffee onto the bases. Thinly slice the bananas and spread them over the toffee.
  3. Use a hand mixer to whip up the cream so that it just holds its shape. Spread the cream over the bananas and sprinkle with grated chocolate.
  4. Keep in the fridge until you are ready to eat them.
