BBQ Chicken Skewers

You’ll be surprised how much fun it is to make these tasty skewers. Make them really colourful and fun to eat and serve them with a tasty homemade BBQ sauce. Even marinate and cook them in the sauce if you have more time.

Ingredients

Skewers:

  • 1/2 Chicken Breast per person
  • Choice of veg (e.g. onion, peppers, mushroom, courgette, aubergine)

BBQ Sauce:

  • 50g Brown Sugar
  • 50ml Soy Sauce
  • 300ml Tomato Ketchup
  • Chilli Flakes (Optional)

 

  • 2-3 BBQ Skewers per person

Directions

  1. Preheat the oven to 200ᵒC.
  2. Cut the chicken breasts into small (2x2cm) pieces.
  3. Choose your vegetables and cut them to a similar size to the chicken.
  4. Push the chicken and vegetables onto the skewers, making sure everything is evenly spread out, without too much of a gap in between.
  5. Place the skewers onto a lined baking tray (use foil or silicon).
  6. Cook the skewers in the preheated oven for 10 minutes or until the chicken is cooked through. Turn the skewers over after 5 minutes to make sure they cook evenly.
  7. Remove one skewer from the oven and check that the chicken is cooked by cutting the largest piece in half. If it is still pink inside, continue to cook the skewers for a few more minutes and then check again.
  8. For the BBQ sauce; mix together the sugar, soy sauce and ketchup. Taste and adjust using extras of the ingredients. Add a pinch of chilli flakes if you like spice.
  9. Remove the skewers from the oven and serve with your homemade BBQ sauce.
