For those of you who are looking for something simple but impressive, this recipe is perfect. It has always been a huge hit in my house and it takes less than half an hour to make!
Ingredients
For the Base:
- 200g Biscuits of choice
- 100g Butter
For the Topping:
- 400ml Condensed Milk
- 600ml Double Cream
- Juice of 2/3 Lemons
- Seasonal fruits/ Decorations of choice
Directions
- Line the bottom of a round 20cm cake tin (preferably with a loose bottom or springform) with greaseproof or silicon paper (alternatively make indiviudal cheesecakes in ramekins/similar).
- Use the end of a rolling pin to crush the biscuits finely in a large bowl, although not so much that they become dust. Melt the butter in a saucepan/microwave and add to the crushed biscuits. The biscuit crumbs should stick together, if not, use a little more butter.
- Firmly press the biscuits into the bottom of the cake tin using a large spoon, making sure they are spread evenly.
- In another large bowl, mix together the cream and condensed milk. Add the lemon juice slowly whilst stirring at the same time. The mixture will begin to thicken. Continue adding lemon juice until your mixture no longer runs like a liquid, and falls slowly off of a spoon. Spread neatly over the biscuits, creating a flat surface. Decorate with fresh fruit, chocolate, cake decorations or anything else you fancy.
- Chill in the fridge for an hour or so until it is completely set and then carefully remove from the tin to slice.
