Not everyone’s favourite… but something to try. If you’re feeling brave and ambitious you can buy whole squid from a fish monger and prepare it by yourself (ask your fish monger for advice or look up an easy Youtube tutorial).
Ingredients
- 400g Squid Rings
- Grated zest of 1 lemon, plus a couple wedges
- 3 cloves of garlic
- 2 Tbsp Olive Oil
- Freshly Chopped Parsley
- Salt and Pepper
Directions
- Heat the oil in a large non-stick saucepan over a low heat and add the lemon zest and garlic.
- Turn up the heat to medium-high and fry the squid for 1-2 minutes until it takes on a little colour.
- Season and sprinkle over the parsley.
- Serve immediately with a wedge of lemon.
